Coconut Milk Ice Cream! (It’s healthy)

Who doesn’t like ice cream in plus 30 weather? But ice cream has so many preservatives that it just isn’t healthy.  Here is a recipe for ice cream that requires a portion of the amount of work regular home-made ice cream requires, and it’s healthy!

Take 1 can of coconut milk (we use three), and freeze it on a cookie sheet.

When it’s frozen solid, break it into chunks, and toss it in the food processor.

Put the stuff that is ice-creamy like into a bowl and put it back into the freezer.

When it’s all smooth and creamy, mix it and leave it in the freezer, stirring it every 10-20 minutes.

When it’s the texture you want, take it out and add in a splash of vanilla and sprinkle of stevia or some other sweetener to taste. 

Add in cocoa powder if you want chocolate ice cream, or leave it as just vanilla!
